BUTTERFLY FILLET

this is what happens when you watch too much Hannibal and listen to the maggot on repeat because i spend way to much time listening to the Melvins false you can never listen to too much Melvins.

i think i kinda disgraced the good doc because he would never fillet so roughly and without perfect symmetry AND let the meat spoil.  i also don't know if there's any culinary use for ears
